If you're just on a break then I would also recommend getting over to Lamma Island for some seafood at Sok Kwu Wan, you can get your hotel to arrange it. Otherwise, Aqua also do a great sunset cruise round the harbour - you can arrange from their website http://www.aqua.com.hk/ the boats called Aqua Luna.
